We had a birthday in the house this week and I of course made a birthday cake for the lad and my goodness was it a hit! I used my secret weapon (or not so secret) chocolate cake recipe that always puts a smile on faces. Since the birthday boy loves reeses peanut butter anything I made a peanut butter center for the cake to give it the resses touch. I will say however I have made this cake with at least four different centers and icings and they are always a hit. The actual cake part is so simple, its moist and fluffy. I think because the cake is truly the star it allows the flavor combinations of fillings and frosting to be endless and yet still so decadent.
The cake
1 3/4 C. flour
2. sugar
3/4 C. cocoa flour
2 tsp baking soda
1 tsp baking powder
1 tsp salt
1 C. shaken buttermilk
1/2 C. vegetable oil
2 eggs room temperature
1 tsp vanilla extract
1 C. hot coffee
In a bowl sift together the flour, sugar, coca, salt, baking soda & powder. set aside.
In a bigger bowl mix together the buttermilk, oil, eggs, and vanilla extract.
Slowly pour half of the flour mix into the buttermilk bowl and mix until incorporated then add the other half.
After you have mixed everything completely pour in the hot coffee until well mixed
Pour into your greased 9in round cake pans and bake at 350 for 25 to 30 min. or until the toothpick comes out clean.
It's that simple!! Like I said there are countless amounts of flavor combinations I've done roasted strawberry buttercream, a salted caramel creme frosting, chocolate ganache, it's really up to you!
